remedios caseros: A Simple Definition


This is one of my personal favorites, and I eat it several times a week. It is a meal that combines the best of Mexico and Spain, which is why I like it so much.

I love the way my mother cooks and I love the way my father cooks. But I still like my father’s cooking because he always cooks like a true Spanish cook.

The best Spanish cooking I have ever had was the tortilla de patatas. The tortilla de patatas are a traditional soup that’s so hot, so soft, and so tasty, it’s hard to believe it’s not real. Now, I’m not saying that every single dish in my kitchen is authentic, but the tortilla de patatas are the real deal.

The Tortilla de Patatas is a soup made with potatoes, chorizo, and chicken that is served with bread (which is why I like it so much). The tortilla de patatas is a dish that is popular all over Spain, especially with people who have been living there for a long time.
